Chocolate Quinoa Puffs

Quinoa puffs with melted chocolate, peanut butter and coconut. This crunchy healthy snack features quinoa puffs which along with coconuts are a good source of iron and being high in fiber promote digestive health. Choosing high quality dark chocolate may improve brain function, lower blood pressure and increase your energy levels. Peanut butter rich in protein and magnesium also has the ability to lower bad cholesterol and repair cell damage. 

GLUTEN FREE AND VEGAN IF USING DAIRY FREE CHOCOLATE

Ingredients

  • 1 3.5 oz dark chocolate bar melted (or chocolate bar of choice)
  • 1 cup quinoa puffs
  • 1/3 cup peanut butter
  • 1/4 cup shredded coconut flakes

Directions

Melt your chocolate the best way you know how. I melt my chocolate in a double boiler or simply one pot stacked on top of another with about 1/3 of the bottom pot filled with boiling water. Once the chocolate is melted I pour it into a mixing bowl and let it cool for about 10 minutes mixing frequently. Once chocolate has cooled down a bit I add the quinoa puffs, peanut butter and coconut flakes and mix. For the mixture to stick together I use a mini tart hole tray something similar to a muffin tin tray but smaller holes. I put about 2 teaspoons of the quinoa mix to fill the cups. Makes about 12-14 quinoa puffs. Refrigerate. Should be ready as soon as chocalate hardens and is easy to take out approximately 30 minutes.

TIPS- I use good quality chocolate with very little sugar added, peanut butter with just peanuts or peanuts and salt in the ingredients and unsweetened coconut flakes. You may use rice puffs if you dont have quinoa puffs and can substitute peanut to almond butter according to preference.
