GLUTEN FREE AND CAN MAKE VEGAN TIP BELOW
Ingredients
- 2 eggs (vegan-flax eggs recipe below)
- 3 mashed ripped bananas
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon coconut oil
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 1/3 cup coconut flakes
- 1/3 cup chocolate gems or chocolate chips
- 1/3 cup chopped walnuts (optional)
- 1/2 teaspoon cinnamon or more (optional)
- 1 teaspoon vanilla extract(optional)
Directions
Preheat oven 350 degrees. You can mix everything together in one bowl. With a whisk beat the eggs and mash in bananas using a fork. Add the baking powder and soda along with almond and coconut flour mix. Add in the remaining coconut flakes, chocolate gems, walnuts, cinnamon and vanilla extract. Line a loaf pan with parchment paper and add in the batter. You can grease the pan with little coconut oil so the parchment paper sticks to the pan which will make it easier for the paper to stay in place. Bake for 35 minutes and remove from oven.
VEGAN FLAX EGG
Mix 1 tablespoon of ground flaxseed meal with 3 tablespoons of cold water. Let it sit for 15 minutes to set. Easy and only two ingredients.
