Soup made from potatoes, carrots and cauliflower. Blended with fresh dill and parsley full of nutritious and delicious vegetables this soup will keep you full for hours. Full of fiber, plant protein and low in calories all the blended vegetables give it a creamy and delicious taste. Although it’s hard to find, adding fresh lovage herb makes the soup taste unique and earthy with a hint of celery and parsley like flavors.
GLUTEN FREE AND VEGAN
Ingredients
- 3 medium potatoes
- 3 medium carrots
- Half of a cauliflower head
- 4 garlic cloves
- Half of white or yellow onion
- 2 Tbsp Olive Oil
- Salt and Pepper
- Onion and garlic spice optional
- Fresh dill and parsley optional but recommended
- Fresh lovage optional and hard to find but has amazing taste in soups
Directions
- Boil 7 cups of water so its ready when you need it.
- Dice the onion and garlic into small pieces and place in pot and fry with olive oil on low heat.
- Meanwhile peel and dice potatoes and carrots and place them into pot with onion and garlic.
- Add onion and garlic spice along with salt, peper and the boiling water to vegatble pot and boil.
- Once starts to boil lower the heat and cook for 15 minutes.
- Cut up the cauliflower florets and add to soup after the 15 minutes is up and cook for another 10.
- When finished scoop out some of the vegetables from soup and you will add it back to soup after its blended.
- Using a blender add soup in small batches so doesnt spill out of blender and blend. Pour each batch into a big bowl or another pot untill all soup has been blened and pour back into pot.
- Put vegetables that you have taken out back into the soup and chop up a 1/4 cup of dill and parlsey or more according to your taste mix into the soup and enjoy.
