Mushroom cheese sandwich with onion and spices. This sandwich is very satisfying with nutritious mushrooms which protect brain health, a healthy gut and may decrease the risk of certain cancers. Adding mozzarella cheese gives the sandwich a creamy and delicate flavor.
VEGAN AND GLUTEN FREE TIP BELOW
Ingredients
- 3 large white button or baby bella mushrooms
- 1 slice of mozzarella cheese optional
- bread of choice
- 1-2 tablespoons of chopped white onion
- dash of garlic powder
- 1 tablespoon olive or avocado oil
- salt and pepper
Directions
Using a box grater shred the mushrooms. Chop the onion and fry it together with mushrooms. Add garlic powder, salt and pepper and cover on low gas for about 5 minutes. Uncover the pan and fry on high another minute or so to get the golden color that you like. Meanwhile toast a piece of bread in a toaster or toaster oven. When done put mushrooms on top of bread with mozzarella cheese and toast for another minute or 2 if using a toaster oven for the cheese to melt. Quick and easy recipe.
If vegan skip the cheese or use a vegan friendy option. If gluten free use bread of choice. I enjoy the sandwich with ezekiel bread which is a flourless, sprouted grain bread.
