Creamy Tomato Soup

Easy and quick creamy tomato soup with a nice taste of Italian spices which can also be used as pasta sauce. Tomatoes may reduce the risk of heart disease and certain cancers. With their great source of vitamin C, A and potassium they help support immunity, vision and skin health. Adding delicious minty, citrus basil adds lots of flavor to this soup. 

GLUTEN FREE AND PLANT BASED IF NOT USING HEAVY CREAM

 

Ingredients

  • 1 small to medium size yellow or white onion
  • 5-7 garlic cloves according to your preference
  • 2 medium carrots
  • 2- 28oz cans of whole peeled tomatoes
  • Fresh basil
  • 1 Tbsp Olive Oil
  • 1 teaspoon or more of Italian seasoning
  • Salt and Pepper
  • Heavy cream optional

Directions

  1. Chop up onion and garlic and fry in a pot with olive oil 2-3 minutes.
  2. Chop up carrots and add to onion.
  3. Add the 2 cans of tomatoes, salt, pepper and Italian seasoning.
  4. Simmer 15-20 minutes on low heat.
  5. Transfer the soup into a blender little by little in few batches.
  6. Put soup back into pot and add one cup or more water according to the consistency you want.
  7. Chop up basil and mix in soup. I use a lot of basil because I love the taste.
  8. This soup can also be used as pasta sos. Just don’t add water and you may add 1/4 cup heavy cream.
