Pesto Pasta

One of my favorites. Pesto with sundried tomatoes, fresh basil, garlic and your choice of pasta.

GLUTEN FREE AND PLANT BASED

Ingredients

  • Pasta of choice- I use GF lentil pasta 8oz
  • 3 garlic cloves
  • 1/4 cup Sun dried tomatoes in oil
  • Fresh basil
  • 1/3 cup fresh grated parmesan cheese optional
  • 2 TBSP olive oil or more according to preference

Directions

Place basil in food processor and pulse for a few seconds. If using parmesan cheese add it then and pulse a few seconds more. Crush garlic in a garlic press and add to basil along with sundried tomatoes. Add olive oil and pulse everything together for 30 seconds. Mix in with your favorite pasta and enjoy.
